Meal Plan Monday, January 21
There is something about cold, wintery Sunday afternoons that pull me into the kitchen to bake. I don't have much of a sweet tooth. I will pass on dessert more often than not but I still get the itch to bake. The last few weeks I've been stocking up on whatever fruit is on sale at the grocery store and turning it into something yummy. This week it was nectarine cream cobbler.
You guys! YOU GUYS! Not only did I eat it, I had SECONDS. I never have seconds of dessert. It would have been even better with some homemade whipped cream. While I'm certain that part of the reason I ate seconds is because we ate dessert several hours before dinner (what? That was when it was warm from the oven!) I still would have been tempted after dinner. As Lee says, "This one is a keeper."
We almost stuck completely to our meal plan last week. Friday's dinner was bumped to Saturday after were were invited to a friend's place. Saturday's dinner was bumped off competely. That's the way it goes sometimes.
Monday: Pork chops and salt and vinegar potatoes. And some kind of veg.
Tuesday: Vegetarian quinoa chili and corn bread. I'm fiddling with the recipe a bit because you cannot find zucchinis at all right now. I'm going to sub in some mushrooms and hope it works. I figure mushrooms in a vegetarian chili can't be a bad thing, right?
Wednesday: Tandoori cauliflower with rice, raita and green beans. I don't actually know how I'm doing the cauliflower yet. I know I don't want to roast it whole. I'll bing something together and hope for the best.
Thursday: Leftovers or freezer meal night.
Friday: We're doing a bit of a twist on pizza night and having stromboli.
Saturday: Steaks on the indoor grill and um... something.
Sunday: Pulled pork with homemade tortillas. I'll probably also make black beans. Maybe rice (hmm or quinoa). Maybe a cucumber and grape tomato salad.
