Meal Plan Monday January 9

How was your first week of 2012? We did really well with our meal plan until Friday. You see, we decided to redo our master bedroom. I wouldn't say it was on a whim, exactly, but not on all that much more than that. We started at about 3pm on Friday (we both work flexible schedules and odd hours) with depocorning the ceiling and pretty much worked straight through the weekend, ending at about 8pm Sunday night when we finally finished cleaning up the bedroom after painting the walls. Well, finished is a relative term. We haven't moved all the furniture back in yet. Our planned meals for the weekend? Didn't happen.

Friday night was still pizza night but it was takeout. Yummy, yummy takeout. Bonus? Leftovers for lunch Saturday afternoon. Saturday I didn't want to do takeout again and we hadn't taken anything out of the freezer so we hopped over the grocery store where roasts were on sale and threw a roast in the crockpot. Crockpot meals are perfect for home improvement weekends. Again, leftovers fueled us on Sunday. Sunday night I was so tired the thought of cooking made me weep. Chinese food take-out to the rescue. It was one of those weekends I was really happy about takeout. (There might have, maybe, been a poutine grabbed at one point from the chip truck in the Canadian Tire parking lot because I needed food right that minute. Mmmm poutine.)

This week we ARE going to stick to our meal plan. Probably. Maybe. Assuming I remember to take the roast chicken out of the darned freezer.

Monday: Pasta with ground beef. Vaguely Hamburger Helper-ish. We need to move the rest of the furniture back into the bedroom tonight so quick and easy it the way to go.

Tuesday: Chicken with peanut noodles and broccoli and snow peas. Pasta two days in a row and twice in one week is not ideal but we'll survive. (Actually, this makes me quite happy. I love me some pasta.)

Wednesday: Spicy Bean burritos with rice and ummm something. Preferably something green.

Thursday: Soup night! Lentil soup for me!

Friday: Pizza night. Or maybe sub night? Pizza subs? Meatball subs? Hmmm....

Saturday: Ribs! We were busy with home improvement-y things this past weekend and didn't get to make ribs. With cucumber tomato salad. Or maybe our chickpea salad (which happens to have cucumbers and tomatoes in it).

Sunday: Roast chicken. Fact - I put roast chicken on the menu almost every Sunday night. Fact - I hardly ever remember to take the chicken out of the freezer and cook it. Oops? Assuming I really do remember to cook it, we will use the leftovers for burritos bowls on Monday (note to self).

I have been very good at eating lunch (and breakfast!) so far in 2012. Go me!

Yeah... so... after WEEKS of getting off with small grocery store bills (even our Christmas dinner stuff didn't cost very much) we shall NOT discuss how much we spent on groceries this week. Please. *ouch*

Last week I did pretty good with sticking to my meal plan.. at least for dinners. Lunches didnt' work out like I had been planning them, but whatever.

This week is going to be a yummy week!

Monday: Quinoa taco salad

Tuesday: Crispy mustard chicken breasts (from one of the Best of Bridge, of course!) and roasted sweet potatoes

Wednesday: Chickpea curry

Thursday: Avocado & mango fresh rolls. FINALLY found rice paper! Huzzah! These are my favourite dish at Ben Thanh, so I'm going to try to replicate them.

Friday: Potato fish cakes and a salad

I have a meal plan! I was almost 100% successful at sticking to the first ever one i made last week. Sadly, Friday fell through, but I think I'm going to keep Friday as a "whatever" night because by then we just really want to veg out. I do have to get better at planning weekend meals, but I am honestly happy as long as I have my weeknights planned out. Weekends are good for late lunches that double as dinner.

Am I supposed to tell you my plan now? Ok.

Monday: Sweet & Sour Chicken (Clean Eating recipe) with whole wheat rice

Tuesday: Enchiladas (Clean Eating recipe, again)

Wednesday: Veggie Stir Fry with whole wheat rice

Thursday: Sweet Potato Shepherd’s pie (Clean Eating recipe altered)

Friday: Home made pizza? Maybe. That’s the plan anyhow. Have to find dough & think of toppings!

I wanted to make sure I had meals planned so that I could have leftovers as lunch options at work. Saves me money and fast food trips. ;)

beyondelsewhere We've made Friday night's our default pizza night. If we are feeling like it (most weeks) we make it. If we are not feeling up to make it we order in. Either way it doesn't require a lot of thought. And Lee gets to eat lots of pizza, which makes him happy.

Lee takes his leftovers as his lunch. I generally raid the fridge but I'm getting better about at least thinking about it in advance.

Wondering who ever thought that popcorn ceilings were attractive?? I need to ask my Dad who is a builder of homes.

What color did you paint the room? Saturday home made pizza, well sort of bought pre-made pizza crust, it was yummy topped with tomato,mushrooms, spinach & cheese. Pork ribs in the crock pot yesterday with black beans and corn. Taco's for lunch this week with fresh spinach, till the pork runs out. Tonight home made chicken tenders with green beans. As for the rest of the week, still working on the menu.....

cookingwithkary What I've heard (and this is quite possibly untrue) is that it's harder to hide drywall imperfections on ceilings so they popcorn them. It's faster than doing a perfect flat ceiling. But that's just what I've heard. We painted our room... well I guess brown but that sounds not nearly as nice as what it is. Martha Stewart paint colour natural twine. Ceiling in MS colour talc. They go well together.

I love homemade chicken tenders. Now I wanna switched out the peanut noodles for chicken tenders. Or have both. lol Mmmmm yummy food.

I think you are correct on the popcorn, hides imperfections really well. We painted our master with brown as well, some fancy name which I forget (it was 4 years ago) looks awesome and has a warm feeling.

I have a recipe on my blog for home made chicken tenders using panko if you want to check it out. http://cookingwithkary.blogspot.com. What kind of breading do you use? Now I am hungry again. ugh that's what happens when talking food.....

cookingwithkary Sometimes I use panko. Sometimes not. It depends on which I have handier. :)

Sometime we dip ours in a dijon/white wine vinegar mix before dipping them in the crumbs (something I picked up from Simply Recipes). Makes them tender and just gives them the teeniest tang.

You had a pretty busy weekend with all of those reno's! I know there would be no way I could stick to a meal plan. As for the poutine truck I'm jealous! I haven't seen one of those babies since I moved here...Someone just called to remind me that it was minor hockey week and still hasn't forwarded the schedule. So we might not be sticking to this plan but it's a plan!

Wednesday Dr. Oz's Diet Soup

Thursday Sweet and Sour Chicken with veggie fried rice (I have a craving for from the looney spoons book)

Sunday Roast Chicken, Mash Potatoes, and honey glazed carrots

Hey Karen, sounds like you've got your work cut out for you, both meal and renovation-wise.

I'm curious as to why there is no fish in your meal plan. We're not big fish eaters either but I always worry that we don't eat enough of it. Curious as to what your thoughts are on the topic.

@BehavioralChild We're not big fish eaters, though we DO mean to eat more of it. Kinda of. You see, I grew up on an island. I come from a fishing family. So when we had fish for dinner it was generally caught that day. Now I live in the middle of the country and fresh fish is an oxymoron. (Ditto fresh scallops, mussels, clams, oysters, lobster.)

victorias_view@behavioralchild Mussels tend to actually fair pretty well. My problem is that I was a mussel vendor (yes, a street cart!) for a summer and um, I got them stupidly fresh. Sooooo good.

Just had to comment, grew up in San Diego with fresh fish right off the boat. Now in the Carolina's three hour drive from the coast, missing that fresh fish. We have a local fish monger who trucks in fresh fish every day, but very expensive.
