Meal Plan Monday, November 7

The title of this post is a total cheat because we are NOT meal planning this week. We're on vacation. Kinda. We're in Florida because the fake husband is attending a conference and I'm just here for the sun. And the butter beer.

I am sure, however, that by the end of the week I'm going to be jonesing for a good homecooked meal. (And then next week I'll be looking around for someone to deliver me Coronas... that's the way it goes.) Let me live vicariously through you and your yummy meals this week, won't you?

Sunday: Meatballs and macaroni

Monday: Chicken and apples with mustard glaze, green beans with garlic and almonds

Tuesday: (Basketball game night) Leftovers

Wednesday: Grillled pork chops, roasted cauliflower

Thursday: Salmon leek pasta

Friday: Beef tacos

I feel like I'm not eating nearly enough fruits & veggies now that it's too chilly for smoothies for breakfast (oatmeal instead), so I've been craving lots of veggies lately. Hoping some of these will help out with that.

Monday: Southwestern spaghetti squash.

Tuesday: Chicken souvlaki with yummy greek salad.

Weduesday: Mediterranean tuna antipasto salad (http://www.eatingwell.com/recipes/mediterranean_tu... )

Thursday: Chicken parmesan with zucchini "pasta" (aka where I shred my zucchini and use it in place of pasta noodles)

Friday: Pulled pork in the crockpot, with a side of broccoli slaw.

Saturday: Excited! The bf made plans with some of the guys, so I have the weekend to myself. Am going to attempt making gluten-free pie crust in hopes that I can figure out something I like for Christmas baking. Anyway, am going to use the crust I attempt to make on Saturday dinner for quiche. If crust doesn't turn out, I suppose I'll end up with scrambled eggs for dinner instead.

moonsoar If the crust doesn't work out I would suggest a frittata. After all, it's like quiche without the crust, right?
