Meal Plan Monday, October 29

Like many people in North America, we're preparing for a wet and windy week. Unless, of course, we get snow, which I don't think we will but who knows? It changes every few hours. Yesterday at 4pm we were told to prepare for 72 hours without power as they were predicting utility lines would be going down in the storm. Then at 6pm we were told that Ottawa would be a safe haven in the storm. So who knows? But don't worry, since we're likely to not get hit I am taking on the responsibility of stressing out for all my friends who will be. I'm a giver that way.

Remember how last year I kept putting roast chicken on our meal plan and then hardly ever made it because we kept forgetting to take it out of the freezer? Last week we put it on the menu, discovered we actually didn't have a whole chicken in the freezer and forgot to buy one. We improvised and made Loaded Potato and Buffalo Chicken Casserole instead. I've been informed that this not only needs to go in the "Keeper" file but the fake husband wants to make it for the boys some Football Sunday.

Monday: Breaded vinegary pork chops (from Dinner: A Love Story - our love affair with that book continues) and roasted squash.

Tuesday: Chili and corn bread.

Wednesday: Apricot mustard chicken drumsticks (again, from Dinner: A Love Story) and cauliflower something or other. Maybe cauliflower gratin?

Thursday: Bean and tomato soup (yes, again from Dinner: A Love Story) with some whole garlic bread (freezer stash!).

Friday: Gnocchi and tomato sauce.

Saturday: Slow Cooker Carnitas!

Sunday: We're taking the carnitas leftovers and making carnitas tamale pie.
