Meal Plan Monday, October 31 - Happy Halloween!

Happy Halloween! Can you believe it's the end of October already??? We're hitting the road again this week and I almost forgot to make a meal plan. We don't leave until Friday though, so that would be silly.

We'll be heading down to (hopefully) sunny and warm Universal Studios Orlando. My husband is going to a conference and while I will be working on the days he's in conference, I also plan to do my share of sitting by the pool. (Note to self: find sunscreen.) We'll be gone all next week so I won't be meal planning but I'll be poking my head in to see what you are cooking.

Monday: Tourtiere (alas, not homemade) and um... something. Broccoli? Maybe?

Tuesday: Hamburger noodle casserole (which was supposed to be Sunday's meal...)

Wednesday: I'm meeting a friend for dinner and the fake husband is going to his friend's place for dinner. No cooking!

Thursday: It's going to be clean out the fridge before going away for 8 days dinner. If there's nothing in the fridge? Nachos. Or quesadillas.

Friday - Mostly likely something at the airport. Or plane food. Or get to the hotel really late and ordering room service food.

Saturday: We're contemplating the Wantilan luau for dinner. But I'm cheap. (But it's a luau!) (But I'm cheap!)

Sunday: I'm not sure. I think the fake husband has some pre-conference party thingy. Maybe I'll wander City Walk on my own? Hmm I wonder if they serve dinner poolside at our hotel?

My first full week of meal-planning! We are trying to save $$ so we bought a Costco membership and a vacuum sealer for freezing meals:

Monday: Marinated chicken thighs, rice, broccoli

Tuesday: Meatloaf with potato wedge, carrots

Wednesday: Grilled Salmon with rice and salad

Thursday: Chicken and apples with mustard glaze, green beans

Friday: Shrimp scampi with pasta

Saturday: Chicken fajitas

I made pumpkin pie yesterday and still have pie dough so maybe a tarte au sucre will go in the oven tomorrow.

KatieBeez Let me know how you get along with the vacuum sealer. We go the containers and ziplock bags route.

Tarte au sucre! Yum! But I can only eat a tiny slice of it so I never made it. So sweet!

Friday Steak, roasted potatoes, and asparagus

Mmm. Now I want quesadillas. Your meal plans always make me crave food.

This week:

Monday - Hungarian chicken casserole. It's from the most recent Best of Bridge book.

Tuesday - Cream of chicken and rice soup - oh my most favourite of homemade soups!

Wednesday - crab salad melts.

Thursday - Pasta, in order to use up the leftover tomato sauce that is in my freezer.

Friday - At the bf's for dinner, which means that we don't even THINK about food until about 8pm.
