Who else is a sucker for silly songs that anyone can sing, loudly, in the car? You know, like the meat ball song.
"On top of spaghetti,
All covered with cheese,
I lost my poor meatball,
When somebody sneezed."
And who else is a sucker for good meat balls, so easy to make ahead and freeze, so versatile for serving one or a crowd, so many variations?
Here's a whole collection of meatball recipes -- I selected ones that include tips on the best meats for meatballs, on the cooking technique (baked meatballs, anyone?!) and how to switch from all-scratch recipes to a-little-bit-scratch.
Pioneer Woman ~ BBQ Meatballs
"... these meatballs changed my life. They were so simple, so savory, so comforting and warm and delicious … I almost cried. Come to think of it, I think I did cry. I always thought it was my hormones regulating to normal levels. But maybe it was totally meatball-induced."
What's Cooking - Kayotic Kitchen ~ Crazy Meatballs
"Meatballs are one of the most often eaten dishes in the Netherlands. We even have a special day for it: Wednesday is ground beef day! ... The standard Dutch [meatball] would include some salt and pepper, a little nutmeg, an egg and breadcrumbs. ... That’s about it. ... I’ve created a slightly different meatball, though. In fact; it’s so different it hardly qualifies as a Dutch meatball anymore. I’ve put my people to shame… but in a good way ... "
The Food I Crave ~ Spaghetti with Meatballs
"Sometimes I go easy and use sauce from a jar. Just make sure you cook the sauce a meatballs together for a little bit as the meatballs will soak up some of the flavor of the sauce."
Amyella ~ Turkey Florentine Meatballs
"Supah Meatballs! ... Ground turkey breast can be really dry ... In this recipe, however, the ricotta (go for the fat free and save the calories, you won’t taste the difference!) and the spinach do an amazing job of keeping the meatballs moist and tender ..."
Faith~Family~Friends ~ Meatloaf & Meatballs
"Ok guys! Here is one of the recipes I have used with OAMC (once a month cooking). Got it from a book called Frozen Assets by Deborah Taylor-Hough."
Marianna's Cooking Adventures ~ Meatballs for Two
"After eating out for lunch and dinner for the last four days it was so good to have a home cooked meal. This recipe is great just for two ... I made homemade tomato sauce that simmered all day and I put the meatballs in the sauce for about thirty minutes to give the sauce more flavor. For those of you who are on a time crunch you can use any spaghetti sauce of your liking...yes, even if it comes in a jar."
Cookbook Junkie ~ Porcupines
"I don't know why I don't make porcupines more often because I really like them and they're so simple to make. They are definitely a nostalgic food for me, since they remind me of stuffed cabbage filling."
Crispy Waffle ~ Weekday Spaghetti & Meatballs
"Spaghetti is such a great comfort food, and for those of us with kids, who hasn't made it at home? We have spaghetti on a regular basis, usually with me making ragu on the weekend ... [but this] came out delish. ... [it] takes less than an hour to make, so you can actually make it on a weekday."
Culinary Cory ~ Sweet BBQ Meatballs (just three ingredients!)
"This is my idea of a simple and easy appetizer ..."
The Cynical Chef ~ Baked Chicken Sausage Pasta with Spicy Tomato Cream Sauce
"... I have a super power, if my boys are anything like their father I can lull them into a state of calm with my food; just like putty in my hands. I think I will start saving recipes in the For Emergencies Only file and this pasta is definitely going in."
Vegan Visitor ~ Versatile Meatless Meatballs
"... my friend ... was off to a holiday potluck and being vegetarian, ... wanted to offer something familiar on the carnivorous table, as well as have something to satisfy themselves. ... my biggest concern was, of course flavour and texture. With a combination of finely chopped mushrooms, crumbs and a glutinous flour to hold them together, they turned out pretty great, if I may say so myself. :)"
