Crock-Pot Chickpea Stew With Balsamic Caramelized Onions

The U. S. is having one of those long holiday weekends and many people on the East Coast are snowed in, which I think translates into a perfect weekend to break out the slow cooker! Of course, it's no secret I'm a huge slow cooker fan, and I'm also a member of the Chickpea Fan Club, so you can see how this Crock-Pot Chickpea Stew with Balsamic Caramelized Onions from Cookin' Canuck would appeal to me. But it's not just the combination of slow cooker plus chickpeas that made me save this recipe for a Meatless Monday post, it's the balsamic caramelized onions that really got me excited about the recipe. This easy dish starts with canned chickpeas, and if you're not a chickpea fan I bet Dara won't mind if you use some other type of white beans, but please don't skip the onions!
