I've been on a one-woman crusade to get more people to like eggplant for a few years, so I love seeing out-of-the-box ways to cook this versatile vegetable. These Eggplant Sliders with Arugula Pesto from Hip Foodie Mom sound like they could become one of my favorite eggplant recipes yet. Alice broils the lightly breaded eggplant slices and then serves them with an arugula pesto that sounds amazing. If you have kids who may not go for the arugula part, you can skip the pesto or just use regular pesto made from basil. This recipe features a couple of links to other meatless eggplant ideas, so obviously Alice is also an eggplant fan!
