Meatless Monday: Gluten-Free Chickpea 'Pizza'

All over the world people combine chickpea flour with water, olive oil and seasonings and make a gluten-free and vegan type of flatbread that's eaten like pizza. This type of chickpea flour flatbread is called socca in the south of France, farinata or cecina in Italy, and faina in Argentina, and there are many more lesser-known names for the dish as well. I think "chickpea pizza" sounds like an unusual and tasty Meatless Monday dish, and I spotted a recipe for Farinata, Socca or Chickpea Pizza from Jeanette's Healthy Living that sounds wonderful. Jeanette adds onion and sprinkles the top with fennel seeds, but have fun creating your own variations!
