Meatless Monday: Grilled Zucchini Rolls with Herbed Goat Cheese and Olives

It's Labor Day in the United States, and if you're going to make this a Meatless Monday you may be looking for a vegetarian grilling recipe that's special enough for a summer holiday party. That's what immediately came to mind when I spotted this recipe for Grilled Zucchini Rolls with Herbed Goat Cheese and Kalamata Olives from Cookin' Canuck. I'm an enormous fan of grilled zucchini no matter how you use it, but I confess it was probably the goat cheese that tipped the scale for me on this recipe. If you have kids, you may want to make some with milder cream cheese for them, but for a Labor Day party, I think this looks like an absolute winner!
