Meatless Monday: Healthy Mexican Casserole with Roasted Corn and Peppers

There's something so satisfying about a bubbling hot casserole on the dinner table. I grew up eating my mom's rotation of casseroles, usually with rice or pasta and ground beef, but for a few years now I've been infatuated with the idea of meatless casseroles. When I spotted this Healthy Mexican Casserole with Roasted Corn and Peppers at Pinch of Yum, I immediately thought of what a perfect Meatless Monday dinner this would make. The casserole has corn tortillas layered with refried beans, roasted red peppers, corn, enchilada sauce and cheese. And if you're really lucky you may have some leftovers to freeze and you'll have a meatless dinner to reheat and eat another day!
