Mediterranean Grilled Vegetable Tartine

One of the things I love about summer is grilled vegetables, and this Mediterranean Grilled Vegetable Tartine from Panini Happy is a Meatless Monday dinner that has all those summer veggie flavors I crave. What's unique here is how Kathy grills the marinated vegetables on a panini grill, a perfect idea if you don't have an outdoor grill or don't want to bother heating it up. Then the delicious grilled vegetables are served open-face on grilled bread that's topped with a layer of hummus and the whole thing is sprinkled with some feta. I bet this will disappear pretty quickly!
