Potato, Bean, and Kale Soup

I'm sure there are people who couldn't celebrate St. Patrick's Day without corned beef, but if you're not one of those Irish carnivores, we have a lovely green soup for a Meatless Monday St. Patrick's day dinner. This Potato, Bean, and Kale Soup from Fat Free Vegan Kitchen has the green color of kale combined with potatoes. To me those are certainly two reasons this soup seems a little Irish, even if it's actually a recipe with Italian roots. And I adore the tiny little potatoes Susan uses here; so maybe if you're cooking for kids you can even work a leprechaun theme into the soup!
