Last week I shared my longtime affection for butternut squash, and I guess I still have squash on the brain because the Meatless Monday recipe that caught my eye this week is Roasted Butternut Squash and Black Bean Enchiladas from Reluctant Entertainer. Sandy serves this with a green salad and some extra sour cream and cheese on the side for people to add at the table, and I'm sure there are plenty of compliments when this is on the menu for guests. And she reminds us that butternut squash will keep for weeks in a cool, dry spot, so when you pick one up for this recipe, why not stock up on this delicious squash?
