I'm a huge fan of lentils, mushrooms and barley, and I love to make soups in the slow cooker, so when I spotted this recipe for Slow Cooker Mushroom, Barley and Lentil Soup from 365 Days of Slow Cooking, I immediately thought about how amazing this would be for a Meatless Monday dinner. Karen says this soup is so good that her meat-loving husband requests it for dinner. The soup cooks all day on low and then dried herbs are added for the last hour of cooking time for extra flavor.
