After I featured Brussels sprouts for my last two Meatless Monday posts, I promised something different this week, and I think this Slow Cooker Rosemary and Thyme Potato Soup from Barefeet in the Kitchen sounds like meatless comfort food at its best! Not only that, it can cook all day long in the slow cooker, just in case you might have a few things to do on the Monday before Christmas. Mary suggests this can be topped with optional ingredients like cheese, chives, parsley, green onions (and even bacon if you don't care if it's meatless), and I'm guessing this is a Meatless Monday soup the whole family will enjoy!
