In June the evenings are still pretty cool, and what sounds good is a dinner idea that's served warm, but still has flavors that signal the impending arrival of summer. I think these Spicy Black Bean Stuffed Sweet Potatoes with Avocado Lime Sauce from Dishing Up the Dirt sound perfect for spring-into-summer dinners, and if it does happen to be getting too hot for the oven where you are just use my favorite summer trick and cook the sweet potatoes in a toaster oven. This recipe has so many of the flavors I love; sounds like a perfect Meatless Monday dish to me.
