Meeta Wolff writes the beautiful blog What's For Lunch Honey from Weimar, Germany and she's created two beautiful and delicious-looking tarts that would make an elegant Meatless Monday dish whenever you can get flavorful tomatoes and fresh zucchini.  I love the sound of both the Zucchini, Fennel, and Goat Cheese Tart and the Tomato, Zucchini, and Feta Tart (pictured above) and both variations are included in this recipe.

VVK, yeah...now that I live in the Bay Area of California (where there are ALWAYS tons of vegetarian and vegan options all over the place), it's so strange to return to parts of the country where people can't imagine eating like that. I'm not vegetarian myself, but there is no question there are great benefits to eating less meat and more plants!

Thanks. I don't think he got any idea of how people who don't eat meat live. The way he looked at me was more like "Are you from a different planet or what?". Anyway, I never get tired of telling people how healthy vegetarian diet is.

Of course, I would want to speed it up and cheat with pre-made dough or something. Also grams give me headaches because I am not that kind of cook. I know. I know. All the pros do grams as does the rest of the world.

I have now thought of a quick cheat that should do!
