Vegan Red Cabbage Bowl with Tofu and Peanut-Sriracha Sauce

I've been doing Meatless Monday recipes on my food blog for quite a few years now, and since I'm not a vegetarian, I've enjoyed the challenge of coming up with a really delicious meatless dish every week. What has surprised me is how many of my favorite Meatless Monday creations have turned out to be vegan, and this Vegan Red Cabbage Bowl with Tofu and Peanut-Sriracha Sauce (from Kalyn's Kitchen) has to be one of my favorite vegan recipes so far. I made this a couple of times to get the flavors just right, and in the final version I scattered the baked tofu cubes over the cabbage like tofu "croutons," an idea that was really a winner. And if you're not a cabbage fan, please make the spicy Peanut-Sriracha Sauce and eat it on most anything you can think of--the sauce is addictive!
