Vegan Spaghetti Squash and Black Bean Mexican Bowl

This week everyone's talking about a Super-Big Bowl, but I'm thinking of a different kind of bowl, one where a variety of ingredients are served together as a flavorful one-dish meal. I suspect this type of meal-in-a-bowl may have hit the culinary scene with Asian rice bowls. but now endless combinations are featured together, and I've had fun over the last year experimenting with vegetarian and vegan bowls for Meatless Monday dishes. This Vegan Spaghetti Squash and Black Bean Mexican Bowl from Kalyn's Kitchen is one of my favorites, partly because I love the flavors combined here and partly because I love the idea of a bowl based on low-glycemic and low-carb spaghetti squash. If the spaghetti squash is a tough sell at your house, this would also be delicious over brown rice; hope you enjoy it for a Meatless Monday meal.
