I've confessed more than once to being a bit obsessed with lentils, so no wonder a lot of my Meatless Monday picks include these nutritious and delicious little legumes, and of course this lentil addiction means there are lots of dishes with lentils on my own blog. Recently I had an idea for lentil lettuce wrap tacos on my "to cook" list, which somehow got translated into Vegetarian Lentil Taco Salad with Tomatoes, Olives, and Avocado once I started making it. The cooked lentils are seasoned with a mixture of olive oil, red onion, diced green chiles, homemade taco seasoning, and my favorite Green Tabasco Sauce, so you definitely won't miss the optional ranch dressing or grated cheese if you opt for the vegan version of this tasty salad.
