Let's be honest; veggie burgers can be a little ho-hum, wouldn't you agree? But these Black Bean Fiesta Veggie Burgers from Happy Healthy Life are loaded with flavor from black beans, sweet potatoes, onion, garlic, lime, jalapeno, and lots of other tasty seasonings, and then they're topped with a fabulous-looking Cilantro-Jicama Fiesta Slaw.  This is something I'd love to eat any day of the week!

Dr. Praeger - he's my man. I've had too many veggie burger failures.

My favorite meatless is Briam Florinis ( http://www.mealmixer.com/meal-planner/list.aspx?re... ) - a Greek inspired casserole. It's especially satisfying when all of the veggies come out of our garden!

I think the brilliance behind the whole Meatless Monday idea is that it triggers you to consciously eat meatless meals. If that happens on a day other than Monday, no worries.

Denise and Karen I don't think I have ever made veggie burgers, but I have a recipe for Black Bean patties that I've had saved for at least 2 years. Maybe this will inspire me to finally do it!

I can never get in the habit of doing meatless on a specific day of the week. We try to do a meatless entree at least once a week. We don't always succeed but then other weeks we'll do three meatless dinner-time meals so I feel like it all balances out.

The fake husband was initially resistant to the idea of meatless meals but he's come around. Some of his favourites are meatless meals now. Actually one that we really loved this winter was your black bean and sweet potato chili with lime Kalyn!

I made them once, from scratch -- from a recipe posted by you, or Elise or Alanna (one of my big three) and it was a ton of work. I cursed them the whole time.

But my family - LOVED them and often suggest I make them again. Ain't happenin'.
