Meatloaf Mondays and Mommy Madness….

Last week I ate meat loaf for the first time, ever…and I loved it!  I only have myself to blame for never trying it.  Now every Monday will be Meatloaf Monday at our house.  I’m serious.  Atleast for the foreseeable future…lol.

I threw a pound of ground beef in a gallon size ziplock bag.  Added two eggs, 1 cup of bread crumbs, ½ teaspoon of basil, 5 dashes of the dark soy sauce ( ‘cause I had no Worcestershire Sauce), 1 teaspoon each of garlic powder and onion powder, 1 cup ketchup and handed the closed bag to my daughter, Alyson.  By the time her enthusiasm waned, the ingredients were pretty well incorporated and all I needed to do was shape it into a loaf, spread some ketchup on top, and bake on a pan for 45 minutes at 375*….that was easy, and cheap!

This past weekend I offered to keep my 2 ½ year old grandson for a few days.  Hunter is quite possibly one of the pickiest kids I have ever known.  He will literally vomit if you sneak something into his food by hiding (for example) broccoli with a favorite like Mac & Cheese…vomit, like Linda Blair in the Exorcist movie…instantly, every where…it’s gross…trust me.  It doesn’t matter how small of a thing you bury in a favorite food…it’s like giving a cat some medicine…I’m serious!  Many, many dinners have involved the clean up of Hunter’s vomit reaction to whatever you tried to pass off as something else.  I have seen him refuse to eat…all day…because he will not try something new.  That’s my grandson…until last night…when Alyson refused to eat the meat loaf (odd…because she’s loves it), and Hunter refused to quit eating it.  He ate his portion, my portion, and my husband’s portion…then asked for more! MORE!!!!

My head is still spinning at this strange twist…Hunter and I both are eating meat loaf….and we love it.  I’m must be going crazy….he even ate my homemade chicken nuggets without me even trying to pretend they came from the golden arches!  Mommy madness…we’ll try to get away with anything when it comes to getting kids to eat…
