Mediterranean Egg Wrap

INGREDIENTS:

- 3 eggs
- 1 tsp dried parsley

Filling:
- tomato, cut into slices
- Feta cheese, crumble
- cucumber, cut into slices
-quinoa, cooked
-salt & pepper


DIRECTIONS:
Whisk the eggs in a bowl, and add the mixture into a nonstick pan.
When underside is done , flip gently.
Remove from pan to a plate.
Place tomato, cucumber, feta cheese, quinoa onto wrap, and season with salt and pepper.
Roll it up and cut in half. Sprinkle with parsley and serve.
