Mediterranean Quesadilla from Budget Bytes

When I spotted this recipe for Mediterranean Quesadillas on Budget Bytes I immediately wanted to try it, which I think is the sign of a very good recipe idea. The quesadillas start with regular flour tortillas, but then get very interesting with spinach, roasted red pepper, Kalamata olives, and red onion melted together with mozzarella and Feta cheese. Sounds like a perfect winner for Meatless Monday to me!
