One of my favorite meatless foods is hummus, a creamy dip made from pureed chickpeas and seasoned with garlic and tahini. Recently hummus thoughts were swirling around in my head, and this recipe idea for tostadas made with hummus popped out. If you're familiar with Mexican tostadas spread with refried beans, this is a Mediterranean variation where crisped flour tortillas are spread with hummus and then topped with finely chopped lettuce, Feta cheese, and Kalamata Olives. I also drizzle the hummus with olive oil and sprinkle it with the Mediterranean seasoning called Sumac, but you can skip that if you don't have any. Don't skip making these Mediterranean Tostadas though, because this new recipe idea has been a hit with everyone I've made it for.
