Caprese Quesadilla with Tomatoes, Mozzarella, & Basil Mayonnaise from Cookin' Canuck

In Utah, we're having perfect Indian Summer weather.  There's just the tiniest nip of fall in the air, but gardens are still producing plenty of tasty late-summer ingredients.  My friend Dara from Cookin' Canuck took advantage of tomatoes and basil from her garden to create an amazing-sounding Caprese Quesadilla with Tomatoes, Mozzarella, and Basil Mayonnaise.  Then she enjoyed them at an outdoor lunch with her husband for a perfect fall birthday celebration. ...more
