Elizabeth DiBurro

I'm Elizabeth, a stay-at-home, Mom to two wonderful boys. My boys (husband included) are my world and there is nothing I wouldn't do for them.

Okay, maybe not nothing...that's probably stretching it...I do what I think is right, without turning them into dependent leaches that require Mom for everything.  It's all about balance.

My husband, James, works from home, and we school at home which means we're all home almost every day... together... every... single... day.  Which is quite a big difference from our lives five years ago.  Back then our oldest went to public school, my husband held a job that made him travel 3-4 nights a week, and we lived on the other side of the country from both of our families.  It was during that time that our youngest son was born with multiple severe food allergies and only recently that he was diagnosed withEoE.

We are a pretty active family.  We love mountain biking, skiing, camping and hiking and try to live a very healthy lifestyle.  I'd like to thank food allergies for changing our diets, for the better.  It wasn't until I started reading labels did I really understand what we were putting in our bodies.  It has completely changed our lives, some for the good, some for the bad.

This blog originally started as a way to help others.  You'll find many of our stories here about our ups and downs.  However, I quickly realized that there is so much more that I have to share.  I welcome you to follow me in my journey, OUR journey of living life the way WE think we should, NOT how society feels we should.

I try to live life healthy, simply, easy, and honestly.  I share my success, my failures, my recipes, my advice, my emotional baggage (lucky you) in hope that some of you can benefit and relate to it.

Autumn Madness Muffins - Gluten Free and Top8 Free

Delicious gluten free apple pumpkin muffin with cinnamon pumpkin icing. It goes perfectly with a cup of hot chocolate or tea. If this doesn't scream fall, I don't know what does. I can picture myself eating one all snuggled up in a blanket and looking out the window as my boys rake the yard; enjoying a quiet moment to myself....more

Easy Veggie Quinoa Recipe - Gluten Free and Top8 Free

This recipe makes enough for 6-8 servings. I make it for dinner and save the leftovers for lunch, breakfast, or a healthy snack. I place the leftovers inside the resealable plastic bag that I used to coat the veggies with oil to minimize waste and to avoid cleaning a container later. -1 red pepper, washed and sliced-1 yellow pepper, washed and sliced-1 sweet onion, sliced...more
