Cinnamon Ginger Waffles with Vanilla Peach Honey Topping

I'm so excited to share this recipe! For quite a while I've been experimenting with a waffle recipes. There were a lot of duds but this one, this one is pretty dang near perfect. Even my husband likes them and he's honest to a fault. These have no coconut flavor what-so-ever and use very little coconut flour, which is a great way to really stretch out the ingredients.  Read more >

Carrots pushed me over the edge...

Just a warning: this is a Crohn's heavy entry, I'm talking about poop, and gas here!  I inadvertently put myself into what I'm calling a mini-flare on Saturday night/Sunday morning. I'm still feeling the effects right now. It's odd, because as of right now my bowel movements are formed, and I only had two bouts of loose stool. The real issue I'm having is joint pain, mostly in my wrists, which is the area that has been the most effected by my disease.  Read more >

Butternut Squash Home Fries - Gluten Free, Grain Free, SCD legal

I've been making stew that features butternut squash as a sub for potatoes and it's a pretty dang good one.  Read more >

As she fades

My mother’s heath has been on the decline for the past few years.  I don’t even like to say she’s sick because no one knows what is wrong with her. They throw around some phrases like “toxic neuropathy” but really they don’t know what happened or what’s going on or what’s going to fix it or even if they can. She’s been tested for everything several times (and I mean everything, she still gets a Lyme’s test every three months as well as lupus).  Read more >

About Me:

I am a 28 year old mother of three young children who was diagnosed with Crohn's disease in August of 2010 after suffering with symptoms for about five years. Since then I have been on the Specific Carbohydrate Diet or SCD to help maintain my remission. I am also lactose intolerant, allergic to nuts, and I have oral allergy syndrome. That's a nice list. Enough to frustrate even someone as stubborn as me but all these diagnosis provided me with an outlet for my frustration and that is cooking. I never really liked to cook all that much before because I never really felt like I was doing anything besides combining prepackaged things together, now all that has changed. I'm having fun coming up with new ways to explore my kitchen and food in general while sticking to a strict and very healthy diet. I want to reach out to other people suffering with IBDs and let them know that yes you can "do" this diet without nuts and yes you can get better. For the longest time I was just waiting for someone to tell me, "you know you're going to be okay", until I realized that it had to come from me.
