Any recipe with the word "enchiladas" in the title sounds good to me, so of course I was excited when I spotted these Butternut Squash Enchiladas from Vintage Mixer. The enchiladas are filled with cooked squash, corn, and two types of cheese and then baked in a flavorful Salsa Verde sauce. Sounds to me like a perfect main dish for Meatless Monday!  Read more >

It's count-down-to-the-Superbowl week, so I'm guessing a lot of people are on the hunt for the perfect chili recipe for the big game. Doesn't chili and the Superbowl just automatically go together? I'd never had chili made from lentils, but when I tried this Vegan Lentil Chili with Roasted Red Peppers, Olives, and Green Onion, I loved the slight sweetness that the lentils added to this barely-spicy chili. I'm a huge fan of tofu, and I'm always looking for easy tofu recipes to expand my limited knowledge about how to cook it at home. This recipe for Grilled Tofu with Miso Dressing went right to the top of my "must try" list! Not only is the recipe quick and easy, but the Miso Dressing has so many of my favorite Asian flavors like soy sauce, ginger, and sesame.
