Kalyn Denny

Kalyn Denny discovered blogging in 2005 when she needed a place to share her recipes online. Now she works full time as a blogger, barely keeping up with Kalyn's Kitchen, her popular food blog that features seasonal low glycemic recipes for healthy eating, weight loss, or blood sugar control. Kalyn also shares from-scratch slow cooker recipes from other bloggers at her second blog, Slow Cooker from Scratch. In addition to her personal blogs, Kalyn writes a weekly Meatless Monday post for BlogHer.com, and is proud to be an official Meatless Monday blogger. Her recipes have been featured on sites all over the web, and she has appeared on panels talking about blogging at BlogHer, BlogHerFood, Camp Blogaway, SXSW, and IACP Conferences.

Before she was a blogger, Kalyn taught elementary school for 30 years and was an active member of her local education association, serving as Vice-President and President of Davis Education Association, and as a board member for the Utah Education Association and the National Education Association.

Kalyn grew up in a family with nine siblings in Bountiful, Utah , and recently moved back to her home town, buying a bigger house so she could host parties for her siblings, 39 nieces and nephews, and 60+ great-nieces and great-nephews. Besides her family, Kalyn is passionate about sushi, Scandinavian murder mysteries, gardening, cooking, photography, The Good Wife, and Feta cheese, not necessarily in that order.

Falafel Made at Home

One of my all-time favorite meatless recipes has to be falafel, the classic Middle Eastern dish made from balls or patties of seasoned ground chickpeas that are fried and served with a sauce made from yogurt and tahini paste. So naturally when I saw a recipe for Falafel Made at Home on Israeli Kitchen, I immediately asked if I could feature it here for the Meatless Monday fans. ...more
Love it; as I said, probably my favorite meatless meal!more

Where Were You 10 Years Ago?

The BlogHer editors have been doing a lot of time travel this year, as we continue our Selfiebration of the power of the blogging community while rolling up to our 10 year anniversary conference next month. As we look back over the past decade we find ourselves talking, so often, about who we WERE in 2004, and how we became who we ARE. I've found our team's stories funny and inspiring, with so many "Whoa, I didn't know that!" moments that I wanted to share them with you … and we want to hear your stories, too! ...more

Excommunicated from the Mormon Church for Women's Advocacy: My Daughter, Kate Kelly

On Monday, I sat in a state of quiet panic waiting for the news I feared most, dreading the ringing of my phone. And then it came: My daughter, Kate Kelly, was excommunicated from the Mormon church for “conduct contrary to the laws and order of the church” after publicly advocating for the ordination of Mormon women to the church’s priesthood. The life was sucked out of the room. I sat in stunned silence—speechless and immobile....more

Savory Mushroom-Lentil Burgers

Summer means burgers, and I'm an equal opportunity burger eater. I do enjoy a good burger with meat once in a while, but the last few years I've been finding delicious ideas for meatless burgers of all types, and these Savory Mushroom-Lentil Burgers from Fat Free Vegan Kitchen sound like a Meatless Monday burger that would really make my taste buds happy. I always love some kind of sauce on my burgers, and Susan has that covered with chipotle mayonnaise; doesn't that sound perfect! ...more

Quick and Easy Salsa Chickpea Tacos

It's that time of year when schedules are busy, so most any recipe with the words quick and easy in the title is going to sound like a winner. But some recipes are so easy (and yet still amazingly delicious) that I wish a creative food writer would come up with a more emphatic description; something that captures the idea that this can be on the table in 10 minutes, no actual cooking is required, it will taste amazing, and you will want to make it over and over! ...more

Meatless Monday: Healthy Mexican Casserole with Roasted Corn and Peppers

There's something so satisfying about a bubbling hot casserole on the dinner table. I grew up eating my mom's rotation of casseroles, usually with rice or pasta and ground beef, but for a few years now I've been infatuated with the idea of meatless casseroles. When I spotted this Healthy Mexican Casserole with Roasted Corn and Peppers at Pinch of Yum, I immediately thought of what a perfect Meatless Monday dinner this would make. The casserole has corn tortillas layered with refried beans, roasted red peppers, corn, enchilada sauce and cheese. ...more

Spicy Black Bean Stuffed Sweet Potatoes with Avocado Lime Sauce

In June the evenings are still pretty cool, and what sounds good is a dinner idea that's served warm, but still has flavors that signal the impending arrival of summer. I think these Spicy Black Bean Stuffed Sweet Potatoes with Avocado Lime Sauce from Dishing Up the Dirt sound perfect for spring-into-summer dinners, and if it does happen to be getting too hot for the oven where you are just use my favorite summer trick and cook the sweet potatoes in a toaster oven. This recipe has so many of the flavors I love; sounds like a perfect Meatless Monday dish to me. ...more
