So I'm slowly bringing regular foods into my strictly salads diet after the 20 lb. weight gain and subsequent extreme dietary restrictions. I'm really enjoying exploring new flavors and revisiting some old favorites. Ina Garten has this recipe for Tuscan Lemon Chicken in her Back to Basics book. I love working with a lot of her recipes because on the whole, I find them very thoughtful and unfussy. There's a small French restaurant on the river that I go to about once a week. I love to sit outside with a glass of wine and watch the sun set. They have wonderful quiche and gratin, but my favorite thing to order is their curry chicken salad. For years I have wondered about the recipe, slyly asking the waitresses about specific ingredients. I knew it wasn't as simple as mayo and curry mixed together with chicken. Recently, I tested several recipes from different sources and found Gourmet's to be the closest, changing some of the veggies to match the restaurant's version.  Read more >
