Lori Luna

I am a native Californian, namely Los Angeles (suburbs).  I moved to Northern California in 2003 for a job and never left, inspite of being laid off from that job.  I have a wonderful 4 legged child, Missy, who is the absolute love of my life.  She is a chihuahua/jack russell and makes me smile more than just about anything can.

I have a very diverse professional background, HR, Customer Service, Operations, Events - basically jack of all trades, master of some.

I do not have any 2 legged children nor am I married, both by choice.  I have come to realize my life is simple and easy and frankly that works for me.

I have a business degree and consider going back for my Masters on a regular basis - need funding!

And now, I have a wonderful job and I am grateful to have found a work environment that fits me - working for women who have their act together is inspiring!

Meatless Monday: Healthy Mexican Casserole with Roasted Corn and Peppers

There's something so satisfying about a bubbling hot casserole on the dinner table. I grew up eating my mom's rotation of casseroles, usually with rice or pasta and ground beef, but for a few years now I've been infatuated with the idea of meatless casseroles. When I spotted this Healthy Mexican Casserole with Roasted Corn and Peppers at Pinch of Yum, I immediately thought of what a perfect Meatless Monday dinner this would make. The casserole has corn tortillas layered with refried beans, roasted red peppers, corn, enchilada sauce and cheese. ...more

My Autistic Son's Best Holiday Break Ever

Let's be honest: The winter holiday season can really suck for Autistic people like my son Leo. Leo does not appreciate it when weekly school routines suddenly disappear, and are replaced by random social occasions with loud music, flashing lights, and people who don't even try to understand autism. When the holidays arrive, Leo generally shifts to coping rather than functioning mode, and holiday meltdowns are not uncommon -- not just for my son, but for Autistic people of all ages. ...more
