Cookin' it Old School ~ Meatloaf

 Meatloaf is one of those foods that gets a really bad rap because it is so royally screwed up by so many cooks, professional and home, that most people just pass it by. This is so totally not right. Meatloaf shouldn't be some unidentifiable hunk of dried meat covered in a layer of gummy ketchup smothered in a mess of brown "gravy" as most restaurants/diners would have you believe. Granted this is how it is most commonly seen, but that doesn't make it right. Or edible. And there is much more to a good meatloaf than baking off a hunk of ground meat....more

Kitchen Primer ~ Vinaigrettes

I used to be a Ranch girl, I can admit that, but I discovered many, many moons ago that there is really and sincerely nothing so awesome about ranch dressing that makes it worth the absolutely ridiculous calorie count that is associated with it. I just googled it because I don’t even have a bottle here. 140 calories for 2 Tablespoons; thats about half of what you would use on a side salad ~ that’s and ounce. Yeah....more

Chewy Granola Bars

 I love snacks. This is not the best thing ever for my waistline, obviously. The solution is not going to be stop snacking completely; I am a realist and know that isn't going to happen. So perhaps it would be better to snack intelligently; this is something that I can accomplish. As long as smart snacking doesn't equal things that taste like cardboard....more
