Recipe: Quinoa, Egg & Veggie Breakfast Bites (and a Breakfast Challenge!)

Pin It Confession: I’ve become a bad, bad, bad breakfast eater. I didn’t used to be like this. Naturally, there was no escaping breakfast in my younger years, when parents would monitor the heck out of stuff like that ....more

Recipe: Veggie & Pesto Quinoa-Stuffed Zucchini

Pin It You knew I wouldn’t be able to stay away from posting new quinoa recipes for very long… ; ) One of the hardest things to do when you’re down for a couple of weeks due to illness (can we say double-sided shingles?), especially when you live alone, is keeping up with the nutrition. Let’s face it: when you’re in severe pain, uncomfortable in anything you wear, and so darn exhausted by the pain and malaise, the last thing you feel like doing is cooking. Don’t get me wrong, it’s not like I don’t eat when I’m sick ....more

Recipe: Cashew & Dark Chocolate Chunk Cookies

Pin It *peeks out from under the covers* Is it 2014 yet? Because it feels like mean ol’ 2013 is still clinging like crazy, and I’d rather not deal with its crap any longer. That was so last year ....more

A Very Poor Girl Thanksgiving: How to pull off a last minute, affordable Thanksgiving dinner for two

Pin It Sometimes miracles really do happen. Against all odds, and with the kindness of good neighbors and strangers, my mom and I are actually going to be able to have Thanksgiving together!!! I didn’t think this was going to be possible this year ....more

Recipe: Pan-Roasted Cauliflower with Kale & Poached Eggs

Pin It Hi there. : ) I don’t even know where to begin with this one. The first recipe post after my Daddy’s passing is bound to feel awkward, but I know he would want me to keep doing what I’m doing, so… yeah ....more

I miss you. I love you. And I will always be your little girl.

Pin It He had the best sense of humor. In the 25 days since my dad passed away, that is the one thing that everyone who knew my father tells me, after their condolences. “He was so hilarious!” “He had the best laugh!” “He was the funniest guy!” And he really was ....more

Thank you for your patience during this really difficult time.

Pin It Hi everyone, I hate not being able to post regularly, especially when I am in the middle of a series of posts, like the ones for the Hunger Challenge. It’s been a very rough few weeks filled with electricity shut-offs, major shingles & PHN flare ups (I’m getting really good at that strut-limp, though) and my eldest cat, Beni, having a stroke. I’m walking a lot better now, and Beni is recuperating slowly, but now… now… By now, most of you who follow me on Facebook know my father’s health has been declining for the past few months ....more

Hunger Challenge 2013: Days 1 & 2

Pin It The first couple of days of this challenge were fairly uneventful. I’m still recovering from this latest bout of shingles (which means I’m now in for a good week or so of severe PHN flare ups before they taper off to normal flare ups… yay), so I’ve been laying low with my ice packs, coconut oil, and other items in my arsenal. When I’m down like this I don’t really have much of an appetite anyway, but that’s the kicker: if I don’t force myself to eat – and eat well – my recovery time is a lot longer ....more

Pin It It’s that time of year again! For the fourth time, I am participating in the San Francisco and Marin Food Banks’ Hunger Challenge, and I couldn’t be happier about it. I know, I know, it’s an odd thing to be happy about, this surviving on just $4.50/day ....more
