Strawberry Coconut Napoleon

Strawberry season is here and I'm excited to share this recipe with y'all. I have had a slight fear of working with puff pastry and decided to throw caution to the wind and make this pretty dessert called a napoleon. After working with the pastry dough I thought to myself, why didn't I do this sooner? It was so easy to work with and the recipe was fun to make! I tweaked the recipe on the pepperidge farm package by using coconut pudding instead of vanilla and I was extremely pleased with the results.  ...more

Easy Breakfast Egg Souffle

My favorite meal of the day has to be breakfast, hands down.  I hardly ever get a chance to eat something other than yogurt and fruit during the week because it’s easy to grab and go and fits my busy morning schedule. I took  a day off from work a few weeks ago and took advantage of the opportunity to cook something savory for myself for breakfast. Because cooking is more of a freestyle format for me, I threw together what I called a “whatever you have in your refrigerator egg souffle”. The results were great!...more

Sweet Cornbread Muffins

Cornmeal is  a southern staple.  Growing up my family used cornmeal for savory corn bread, sweet corn bread (my favorite) and as a batter to fry fish.  Not one person in my family didn’t have a supply of cornmeal stashed in their pantry.  Although the corn bread muffin isn’t very fancy, it’s a really good muffin and serves as a perfect side dish for most southern meals or in this instance for breakfast served with a drizzle of honey or homemade preserves.  I hope you try this recipe and if you do, I’d love to hear how it turned out for you....more

Blueberry Orange Muffins

I'm so excited to share the second muffin recipe in this month's muffin madness series on Jem of the South! The stars of this muffin include fresh or frozen (thawed) blueberries and freshly grated orange zest.  After battling through an usually cold winter here in the South, these muffins are a welcoming sign that Spring is on the way. You have to make these muffins soon and in Jem of the South fashion, go big or go home. Don't make 12 baby muffins, make 6 bakery style muffins. You'll thank me....more

White Chocolate Creme Brûlée

It’s February and this month I’m continuing my baking with chocolate!  I’m a huge fan of white chocolate as you can tell from some of my past posts and if you follow me on Instagram. Now I’m not going to debate whether or not white chocolate really is chocolate, what I will say is that it’s awesome no matter what anyone has to say on the subject! ...more

Chocolate Marshmallow Hearts

Homemade marshmallows are one thing. But chocolate homemade marshmallows may be some of the best pillowy soft morsels of goodness you will ever put in your mouth! Okay, that may be a little dramatic, but hey, I have people eating these marshmallows that don’t even like marshmallows. I think chocolate just makes some things better and these marshmallows are no exception.  I usually cut the marshmallows into squares, but since it’s Valentine’s season, I decided cute marshmallow hearts were in order.  So jump into this recipe and try these marshmallows! You won’t be disappointed....more

Homemade Berry Granola

I've been making granola for a few years now and decided what better way to kick off the new year than with a fresh batch. I use a tried and true recipe from one of my favorite food mentors, The Barefoot Contessa. With a few tweaks, I made the granola with my  favorite dried fruit combinations.  The great thing about making granola is that you can go crazy with the add ins. Just get the base of the granola made and mix and match away at your dried fruits and nuts! ...more
