My name is Ginny McMeans and I live in the Great Southwest with my husband and all the other critters that love the heat.  

Cooking has been a lifelong passion of mine and I need to connect with other foodies for my own happiness.   I am a vegan and have a vegan food blog  where I can showcase the recipes that I have created.  My husband has become my editor and food taster.  It is a very rewarding and enjoyable collaboration.  

Being a food blogger encapsulates most of my passions  ...   cooking, writing, photography and last but not least - being a computer geek.  We still fit in travel and nature but my novel reading is suffering.  Thank goodness I get to read a lot of the great articles that are written through blogging and social networking.

I am always looking for a new recipe that makes my life easier.  There is a double challenge because I have to make sure my husband will like it.  You probably know just what I mean, there are the children too.  Slow Cooker Mushrooms and Rice is one of those recipes that just about everybody loves.  It is also versatile because it is a side dish and also a main entree. Last Call for Summer: Blueberry Lemonade Popsicles

Blueberry Lemonade Popsicles are here. Evidently lemonade and blueberries makes a pretty pink color. I was tempted to add more blueberry juice to see what colors I could get but it already tasted so good that I thought I’d better leave it alone. Because of the water in the lemonade this popsicle holds its shape longer and does not want to melt as quickly as some other popsicle. Rustic Chocolate Chip Cookies

Okay, I need to brag a little.  It is a bit uncomfortable but … these chocolate chip cookies are really good!  They were so much fun to experiment with and I think I got just the right balance of sweetness.  Date and coconut sugars were both used so there is mild molasses flavor and the whole wheat flour really balances them out.  If you want them more cakey than cookie then don’t flatten them down as much as I did.  The cookie does not spread much in the pan.  Just the perfect little bites for that special moment you deserve. ...more

Vegan Chicken Tetrazzini

Vegan Chicken Tetrazzini has become vegan just a short while ago. I am not sure where I originally got this recipe but it has been floating around in my head for over 20 years.  Guests and family have all enjoyed it and I would like to pass the recipe on to you.  It starts with a roux and then when additional ingredients are added the flavors become delicious.  Of course, my ‘chicken’ is soy chicken and it works great.  Give this recipe a try the next time you would like a wonderful Italian meal and you will be happy you did....more

Gringo Enchiladas

Enchiladas are ‘the best’.  Even at 17 I knew I could change a recipe and make it the way I like it.  For some reason I never liked enchiladas.  It turned out that it was the corn tortilla.  I switched it to flour tortillas and started making it my signature dish.  When  people would say that they really liked my enchiladas I’d say, with a big mile on my face, “It’s with flour tortillas”.  Then the person would look back at their plate and say “Ohhhh” as if that was ‘it’ and a great revelation. It made me feel good anyway.Now I have changed it again because I use whole wheat tortillas. There is a homemade enchilada sauce too but feel free to buy the canned sauce if you would prefer. The Mexican flavors are all here and they are delicious....more

Twice Baked Potatoes – Vegan Style.

Twice Baked Potatoes are a great standby for company.  They are a special treat for your family too.  I can not count how many times I have pre-prepared twice baked potatoes and had them in the refrigerator when company came over.  All I have to do is slide them in the oven and visit with our guests.Although uncooked potatoes do not freeze at all, cooked ones do.  In fact this recipe comes out just like you had freshly prepared them.  All ingredients are put together and stuffed into the potato shell and then placed into the freezer.  Your side dish is all done until you are ready to bake them for the second time and then eat them....more
