Mini Weight Loss Challenge Plus Roasted Asaragus with Almonds

Do you remember playing Truth or Dare when you were little? Remember how just saying that you wanted a truth or dare made you feel?
Well, I’m ready to play if you are..gulp. Bring on the truths and dare!
TRUTH: I bragged on Facebook that I reached a smaller pant size …
TRUTH: I ate my share plus two on my trip to Vermont (Second part coming soon!)
And when I say over-indulged on wonderful, delicious, good eats, I totally mean it…
PS I’m really there under that sun-kissed skin.
TRUTH: I can’t fit into my smaller size as of today…
TRUTH: I donated all my larger sizes expecting to never be back in them again.
TRUTH: I’m thankful it’s short season. They have more give.
Which brings me to the DARE.
The word DARE always reminds me of SCARED…but I’m not going to let the two get together. It’s not their party, right?
DARE: To lose 5 lbs in two weeks.
You may or may not see this as a challenge. That’s cool, it is to me. Losing 5 lbs takes forever…I think it’s because I let food take over my life since I think I’m so active.
How am I going to do this…
Water, Exercise, Whole Foods.
I suppose it’s a simple calculation but sometimes my tendency to over-indulge and ice cream stand in the way
Last night was the first time in five days I had to cook a meal.
It may be no surprise, but when hubby is running late, I still find myself in the kitchen making a pretty delicious meal. Even if I’m only serving one. I mean come on, I’m worth it.
I’ve been scoring big around lunch time…so much, that I’m completely full at dinner. Speaking with a few RD’s they say this is good to be full at lunch and eat less during dinner. Let’s see how it goes.
The crunchy roasted asparagus with balsamic vinegar and almonds were dinner. Believe me, I was eating all day long prior.
You could serve these as a side dish – I served them as dinner. It contained a protein and veggie, right?
- 1 bunch of asparagus
- 1 tbs olive oil
- salt and pepper
- 2 tbs sliced almonds
- 2 tsp balsamic vinegar
- Preheat oven to 400
- Prepare baking sheet with aluminum foil (I always do for easy clean up)
- In a bowl combine, asparagus, olive oil
- Place on baking sheet and season
- Bake 10-14 minutes, stirring half way until desires crispness is reached
- Splash balsamic vinegar and (toasted*optional) almonds on top
Asparagus is low in calories, an excellent source of vitamin K, a very good source of vitamin A, folate, thiamin, and iron, and a good source of viamin C.
Uhm, so why not, eh?
