Mommy and me pancakes

The other morning my alarm went off and I hit the snooze button.  But I couldn't fall back asleep and I didn't want to get out of bed just yet, so I lay in the dark and perused Pinterest and Facebook.  I found a recipe on the Food Matters page for pancakes.  It looked quick, easy and healthy, and suddenly I was excited to jump out of bed and get breakfast started.

I made some modifications (the batter seemed a little too runny, so I added extra oats) and made two version, one for my toddler and myself, all in less than 15 minutes!

3/4 cup rolled oats (uncooked)

1/2 cup whole milk

1 egg

1/3 to 1/2 banana, depending on size

1/4 tsp cinnamon

1/2 tsp vanilla extract

1 tsp agave syrup 

Blend all the ingredients together and pour onto a hot pan.  This recipe makes about six 4 to 4-1/2 inch pancakes.

For mine, I swapped out the whole milk with almond milk.  Food Matters also suggested swapping for coconut milk.  And to further cut down on the calories, I used cooking spray to coat the pan.

Additional ideas: I added blueberries to some of the pancakes, on others I added thin slices of apples.  Both were big hits with the little one!

Baby version (1 pancake): 65 calories, 11 grams carbohydrates, 1.5 grams fat, 2 grams protein, 1 gram fiber

Adult version (1 pancake): 55 calories, 10 grams carbohydrates, 1 gram fat, 1 gram protein, 1 gram fiber
