Monday Meal Plan January 23

I am back and determined after last week's no meal plan thing. Life is just darned easier with meal plans. Also, I don't know how we were doing in late November and December with our $60 grocery store runs. We haven't had one under $100 the last couple of weeks.

I'm looking forward to dinner this week. We have yummy eats planned.

Monday: Sweet Basil's honey lime chicken enchiladas. I'm hungry just thinking about them. Served with rice and broccoli.

Tuesday: Steak with sweet potatoes and Kalyn's cucumber, tomato and avocado salad. (If our avocados are sufficiently ripe by then -- if not, we'll have it later in the week.)

Wednesday: Roasted lemon garlic herb shrimp and couscous.

Thursday: Something from the freezer - maybe the black-eyed peas I made earlier in the month.

Friday: Subs! It's ballet night (Svengali performed by the Royal Winnipeg Ballet, based on Trilby by George du Maurier) so we need something fast and easy.

Saturday: Dinner out before going to see Crispin Glover and his Big Slide Show. This is also Human Library Day at our city library branches. It's a big weekend. lol

Sunday: You know, we had a big discussion about this and I'm not really sure what we decided. I *think* we decided on a beef roast. Do we want to do a classic roast beef or something like pepperoncini beef?

My meal planning is in temporary holding pattern - newborn babies wreck havoc on pretty much any kind of planning and any hopes of sleep. Plus, I'm not the one grocery shopping at the moment (though I am providing the list, and trying to keep it straight forward!)

We just do not have enough enchiladas around here - we need to change that. Maybe this week, I'll volunteer to make dinner one night and we'll have them.

Tonight - leftovers of what might be pioneer woman's roast with pepperoncini.

Friday will be pizza night.

In between... no idea, except aforementioned enchiladas... maybe.

Monday - ham steak, green beans and new potatoes

Tues - Chick-Fil-a for Spirit Night at Charlie's school

Wed - potato soup (cold front coming)

Thurs - Scrounge or pizza at the school for STAAR night

Friday - salmon and some sort of side dish & veggies

Sat/Sun - no clue

I'm not really sure. I made a yummy chili for today. Cream of broccoli soup at some point, with homemade bread. Probably pasta and chicken....Not sure what else! I slacked on the meal planning this week in favor of planning other things. Gah! I can't win!

We are having a batch of warm weather so I want to make the most of it with the kids. So I have plans for the great outdoors almost everyday after school to take advantage of the sunny weather before we get another blast of cold arctic air. So it's quick and easy this week:

Monday BBQ Ribs and Salad

Tuesday Chicken Casserole

Wednesday Grilled Cheese Sandwiches and Tomato Soup

Thursday Beef Stew

Friday Pizza Night

Saturday Lasagna and Salad

Sunday Roast Chicken, Mash Potatoes, and honey glazed carrots

Hey Karen, Nice to see you back on schedule, everything sounds yummy and very inspiring.

Nothing very exciting this week, so far...

Monday- Grilled pork chops with fresh field greens or warm spinach salad

Tuesday- Turkey loaf, green beans & crispy potatoes

Wed. - Grilled Chicken with home made salsa, sliced avocado (mine feels like it is almost ripe:) with black beans & corn

Thursday- no idea

Friday- Grilled steak and salad

Saturday- Grandbaby coming for a visit and I am thawing a turkey that I had in the freezer. Big family dinner, working on the menu!

Sunday-Hot turkey sandwiches, of course!

Not sure in what order we are doing our meals this week, but I have what I will be needing. Since we are still in the process of moving the last of our belongings from the old house, and cleaning, we will warm up food as we go. In the fridge I have, for the week:

Already prepared Chile Verde and Carnitas, for making burritos.

Already prepared Pastrami, for making hot sandwiches.

Tomato soup to pair with tuna sandwiches.

And the fixings for salads.

sassymonkey I always mean to do a meal plan and never stick to it. It shouldn't be that hard - write it down, get groceries, cook - right?

t_chappell You would think so, wouldn't you? When I started it was with a 3 day plan. I worked up to a week.

sassymonkey That's a good idea. Still leaves room for "spontaneity" (read: lazy/rushed evening).

t_chappell There's always room for that. Just because you have a plan doesn't mean you *have* to follow it. ;-)
