Whenever I am having friends or family over, I like to make things that don't have me cooking the whole time they are visiting. Mainly it's because I like to drink wine and talk about how hot Ryan Gosling is, but I also think it's rude to ignore your guests and be stuck in the kitchen the entire night. Usually this means we throw a lot of Mexican themed dinner parties at my house. Back in January, my hunky farmguy Joe and I went on a 21-day detox cleanse. We gave up gluten, dairy, caffeine, alcohol, sugar, beef, tomatoes, bananas, peanut butter, and a bunch of other stuff. We also ate just one solid food meal a day, at lunch. It was definitely a challenge, and although we did spend a lot of time feeling hungry, we were surprised we didn't miss certain things more. At the mere mention of spring, my husband pulls on shorts and my kids start asking when the outdoor swimming pools are going to open. Family dinners are very important around here, and we make a habit of sitting down at the table each night (as long as my husband is home; when he's not here, all bets are off). Josh and I love to cook and usually make dinner together every night. Life gets busy though, especially with a new baby, and there are some nights when we don't have the time or energy to cook an elaborate meal. It's been a long day at work, and there's so much still to do. You're getting home from work, and the last thing to get done or even think about is dinner. Does this sound familiar? I'm a food blogger who loves to cook who is also not afraid to admit there are times when I'm too tired to cook. I am a little ashamed to admit that sometimes dinner doesn't get on the table before 9:00 or even 10:00. When I'm not able to devote the time to cook a meal, we sometimes rely on foods and meals that are quick to prepare. But they must taste good, otherwise what's the point?...more
I think it's pretty safe to say that I'm a pasta type of person. There is just something so comforting and satisfying about a big plate of pasta. When I was younger I didn't really cook all that much during the week, and when I did cook on workdays it was always something super quick and easy. I was always looking for really quick recipes I could just throw together and pretend I actually cooked that night. One of my first, what I considered "fancier", assembled dishes was this pasta with basil cream sauce. One of my good friends whose dad was a French chef taught this one to me. Spring is the busiest time of year for my kids with all the different sports they play. The activity level has already started to pick up, and I can feel the stress of getting dinner on the table creeping up on me. Although I love to cook and actually enjoy spending a lot of time preparing dinner (I know some of you think I'm crazy), there are days when there just isn't enough time to do that. However, just because I don't have the luxury of spending a few hours in the kitchen cooking dinner doesn't mean I can't try my best to put a healthy satisfying meal on the table....more
