The breakfast burrito has magical powers. And I'm not the only one who thinks so. In her post "In Praise of the Breakfast Burrito," Kris at Cheap Healthy Good poses scenario after scenario -- from the morning rush to the morning after -- which can only be solved by the goodness of eggs wrapped in a warm flour tortilla.

A burrito has all the qualities I like in a breakfast: It's quick, savory, customizable and can be made healthy or less-than-healthy depending on your mood. I like them with leftover veggies and tofu scramble. I like them with avocado and cheese. I like them with chorizo once in a while, and I wouldn't kick a Tater Tot off my tortilla. But the best is just scrambled eggs, cilantro, and Papalote salsa. Then I do the burrito dance.

I don't usually make them for breakfast though. I have made them for lunch or a quick snack in the afternoon. I've even made them by chopping up a hard boiled egg, tossing on some cheese, precooked bacon and then microwaving it.

I like to keep mine to the classics - eggs, cheese, bacon or sausage.

One of the best things about living in Colorado are all the nearby Mexican restaurants. We get breakfast burritos once a week, and, I swear, I'm full until 3pm every time.

I like to keep it simple. I don't do breakfast burritos nearly enough, but when I do, I like eggs, avocado, tomato, and a little bit of sour cream. I can talked into green onions and even some mont jack cheese mixed into the eggs, but even though I love ranchero sauce or salsa on my normal burrito, I can't do it in the breakfast burrito (though, strangely enough, I do like ranchero sauce with other egg dishes).

But I've been thinking it might not be a bad idea to make a bunch and freeze them. The fake husband has a toaster oven at work (and goes into the office really early) and I work from home so I think these would be good make-ahead breakfasts for us. I think it might be a weekend project soon. It's only been on my to-do list since January. ;)
