Moroccan style home fries

My husband loves potatoes. Especially when served as home fries. This means I have to continuously make up different vegetable and flavor combos to keep it interesting. Well today's version was an absolute winner, and I even tossed in a vegetable he claims he doesn't eat. Let's just say he wanted mines too.


Try this recipe and earn a few frequent marriage miles, like me...LOL

Moroccan Style Home Fries


 
Ingredients
 
  • 5 washed and diced red potatoes
  • 2 thinly sliced yellow onions
  • 1/2 peeled and diced small egglant
  • 1/2 cup diced red or yellow peppers
  • handful arugala
  • handful spinach (torn into small pieces)
  • 2 teaspoons ras el hanout seasoning (make your own) or use store brought
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1/4 cup olive oil or coconut oil

Cooking Directions
 
Clean and wash all your vegetables. Cut all vegetables equally in size so they can cook properly.
 
Add oil to your cast iron or other heavy pan. Heat until hot and add your diced potatoes. Add all seasonings (Ras el hanout, sea salt & pepper). Cook for about 7 minutes, occasionally turning.
 
Now add in your eggplant, peppers and onions. Cook until potatoes are nicely browned & cooked through and vegetables are tender, about another 5-6 minutes. Use a bit more oil if needed.
 
Turn off heat, and add the arugula and spinach and stir until wilted and covered with the spices and oil from pan.
 
Add more salt and pepper as needed.
 
Serve with fluffy scrambled eggs and enjoy!
 
~~You can also use the potato mixture as a hearty burrito filling, in a frittata or rolled into crescent dough and baked.
