Mr. Food’s Favorite Chopped Salad

I love quick, easy and delicious cool summer salads and this is one of those! I picked up the “Mr. Food, Just One More Bite” recipe book because I knew my family would love the opportunity to test the recipes.

We were invited to an outdoor potluck this past weekend so I thought the “Mr. Food’s Favorite Chopped Salad” would be popular.

Ingredients:
2 cucumbers, peeled, seeded and diced
2 green peppers, seeded and diced
3 tomatoes, seeded and diced
1/4 c. chopped onion (I used white)
1 (2.25 oz) can sliced black olives, drained
1/3 c. olive oil
3 Tbsp. lemon juice (fresh squeezed is best)
1 1/2 tsp. salt
1/2 tsp. black pepper
4 tsp. white vinegar

Directions:
1. In a large bowl, combine cucumbers, green peppers, tomatoes, onion and olives.
2. In a small bowl, combine olive oil, lemon juice, salt, black pepper and vinegar. Pour over vegetables and stir to coat. Refrigerate 1 hour or until ready to serve.

NOTES: From my kitchen… I diced my vegetables about 1/2″ thick. This makes the salad hearty. I added 3 Tbsp. zesty Italian salad dressing just because its one of my favorites. I would recommend making it the night before if you’re using it at lunch or early the morning of if you are serving it for dinner. I used freshly ground black pepper and it was amazing!
