A Month Of Side Dishes: My Favorite Grilled Sweet Potatoes

My husband loves to grill. When I say he loves to grill, I mean, why do I even own a stove?

When he grills it means that I am in charge of the side dishes, so anything I can put on the grill with the meat is a plus. I stumbled upon this recipe for Grilled Sweet Potatoes once upon a time, and it has become a house favorite. The flavor of the sweet potato mixed with hints of orange and the wonderful, smoky grill flavor make this dish to die for.  Try it out next time you grill.

Grilled Sweet Potatoes

4 Sweet Potatoes

1/2 C. Orange Marmalade

4 Tbs. Butter

1/4 C. Brown Sugar

1 tsp. Salt

1 tsp. Pepper

Microwave potatoes 10 - 15 minutes, or until they are nice and soft. Slice potatoes in half, lengthwise. Using a spoon, scoop out inside of potatoes, leaving about 1/4 inch of potato on the skin. Put scooped potato in a bowl, and set shells aside. Mash potato well. Add Marmalade, Butter, Brown Sugar, Salt, and Pepper to mashed potatoes. Mix well. Spoon mixture into shells. Sprinkle with more brown sugar, if desired. Place potatoes directly on grill, skin side down. Cook until well heated, 10 - 20 minutes. Serve immediately.
