My Niece Molly’s Simply Delicious Sesame Ginger Chicken with Avocado, Mini Chef in Training!

Have you discovered Skype yet? I am familiar with video conferencing and have utilized the technology in the business world, however it wasn’t until several months ago that I created a Skype account and began “skyping” with my sissy Debbie and niece Molly.


Debbie and Molly live in the Pacific Northwest and I live in the Southeast, which places me three hours ahead of them. I can’t tell you why we just signed up but we are now up and running on Skype, we love it! 

If you have a computer with video you can watch each other which is really cool and it’s free, yep that’s right so check it out. You can also make phone calls on Skype for free as well, you chose whether you use the video screen or not. 

Several nights a week we tune into the Sissy, Molly, bear (a dog not a real bear, he just sort of looks like one) and crazy kitty show! Crazy Kitty now rules the household, hitching a ride on bears back, climbing the walls and generally acting like, well a crazy kitty cat. 

Hubby suggested that we cancel our cable, he thinks the girls, and bear and crazy kitty are so much more fun to watch than some of the shows on the telly these days. Stay tuned. 

A week ago Monday sissy Deb sent hubby a txt that Molly was ready to Skype and wanted to make sure that we were both available. We signed on to Skype, Molly and Debbie were on screen decked out in matching aprons which were so very cute, sorry did not get a picture but will next time, my Mother purchased the hand made aprons from our friend Robin who is extremely talented. Robin owns and operates Log Spirit Bed and Breakfast in Athol, ID which is located between Coeur d’Alene and Sandpoint, ID, I have stayed there and it is a beautiful place, if you are heading that way book a room, Robin and Lew will make sure you have a wonderful experience. 

Back to Skype, Molly had prepared sesame lime chicken which was baking in the oven and she wanted to share the recipe with us. Molly and I share a love for preparing healthy meals and tonight was a perfect example, green beans were served as a side and the chicken was topped by several slices of avocado. 

Last night I followed Molly’s recipe, marinated the chicken breasts, sliced up an avocado, tossed a green salad, while hubby fired up the grill. Grilled or baked this recipe is a keeper and I have chicken for lunch this week.  Thanks Molly girl it was delicious! 

And to top off the evening we signed onto Skype and Molly played her violin, crazy kitty actually sat and listened, as for bear he loves when Molly plays and seemed pleased that kitty left him alone! 

Molly’s Simply Delicious Sesame Ginger Chicken with Avocado

4 boneless chicken breasts, remove the skin

¼ to ½ cup of Newman’s Own Lite Low Fat Sesame and Ginger dressing 

  • Place the Chicken in a large dish suitable for marinating the chicken
  • Pour the dressing over the Chicken and marinade for 20 minutes or more
  • Heat the oven to 350 decrees
  • Spray a large baking dish with non-stick cooking spray, or use your Misto like I do
  • Place the baking dish on the middle rack in the pre-heated oven and bake for twenty to thirty minutes
  • Chicken is done when it is cooked through to 160 decrees
  • Remove from oven, plate the chicken and top with sliced avocado

Re Skype: I'm just not quite ready to be seen in front of my computer! :-)

Both my (grown) daughters do cook quite imaginatively (they didn't get it from me, I'm afraid) ... :-!

I'm a Skype virgin, we've not tried it. We really should, it would be nice to see my parents when we talk to them. The thing I hate about webcamming is that i am so conscious of how dorky i look!

My daughter is quite the cook Kary. She loves to cook and no one can make french onion soup better than she does. This recipe sounds delicious, and I will definitely give it a try! :)
