Roasted Chicken with Clementines & Garlic

At least once a week I roast a chicken.  It's easy, no stress cooking and my family loves it.  When the weather is nice, I roast on the grill but now that the temps have dropped, I have a fool proof oven method that delivers a juicy bird with crispy skin every time.   One of the things I love about roasting a chicken is that I can change up my recipe depending on  seasonal flavors....more
Yum! My daughter could help me throw stuff in the roasting pan when she gets home from school ... more

Meal Plan Monday, November 15

Last week I generally did better than the week before but it wasn't without its changes. Saturday night we ended up hosting a dinner for a friend who is moving out of the city and that called for a homemade lasagna. Sunday we hosted Football Sunday which meant providing snacks for three extra men...only one of whom showed up.

I'm sorry, but your pregnancy is totally freaking me out. No offense.

Right now there are about a half dozen women I am either friends with or acquainted with who are currently pregnant. They post their big news all over Facebook and upload ultra-sound images and snapshots of their ever-growing bellies.  They even have professional photographers come in to photograph them and their husband hugging, holding, kissing and caressing that belly.  It's absolutely precious. And it totally freaks me out. ...more

A 'HAPPY' Tax Break for Pet Owners?

Better sit your furry 'tocks down for this one. Introduced on July 31, a proposed bill (HR 3501), Humanity and Pets Partnered Through the Years, or 'HAPPY Act,' would give pet owners a sizable tax break. The primary sponsor, Rep. Thaddeus McCotter (R-Mich), reasons that the economic crisis has negatively affected all Americans and pets should not be excluded in tax relief solutions.  ...more

Would You Travel Solo Over the Holidays?

The only major end-of-year holiday (I’m including both Thanksgiving and Christmas) that I haven’t spent with at least one family member was Christmas 2004. I was at the tail end of spending a semester abroad in Amsterdam and I had a ticket to fly back to the States a few days later. I spent most of that day walking around the city, and I saw a musical performance at a beautiful church in Dam Square. It was nice, but I’d been there for five months by that time and I was ready to go home. ...more
