When I spotted this Sweet Potato and Chickpea Salad on Avocado Pesto, my first thought was "Yum!" followed immediately by "Why didn't I think of this combination?" I love every single ingredient in this vegan and gluten-free salad, especially the use of strong seasonings like ground cumin, lemon, parsley, and red pepper flakes. If I were still teaching school, this is exactly the type of Meatless Monday dish I'd make for Sunday dinner, and take the leftovers to work the next day for a no-heat lunch. ...more
