Chicken Cordon Bleu Wonton Cupcakes

Since my Chicken Cordon Bleu Pasta Bake is one of my favorite recipes and you all love it when I post a new wonton cupcake, I thought it might be time for a mashup of the two. I’m so happy with these Chicken Cordon Bleu Wonton Cupcakes because they’re hearty, super cheesy, full of flavor and I love the bit of crunch from the croutons and the tops of the wontons. The Laughing Cow cheese wedges give an instant creamy texture with minimal work and the crouton topping is used to mimic the breading that usually coats the chicken in traditional Chicken Cordon Bleu ....more

I can’t even express to you how obsessed I am with this BLT dip. One of my co-workers at my old job made the pre-lightened up version of this for an office potluck and it was practically devoured before everyone had even made it out of their offices to eat. I begged him for the recipe, and since then I have made this BLT dip for tons of occasions and every time people have raved about it ....more

Broccoli Cheddar Soup

I wanted to squeeze in one more soup recipe before Spring starts later this month, and what better than a warm, comforting, cheesy bowl of Broccoli Cheddar Soup? I can’t believe I haven’t posted a recipe for this before now, because it’s one of my absolute favorites. When I come up with a recipe, I usually start at my computer by brainstorming a list of ingredients, estimating the amounts I’ll need to use and then plugging that into the Weight Watchers recipe builder to see what the points will be per serving ....more

Strawberry Banana Baked Oatmeal Singles

I found a really perfect container of strawberries at the grocery store this week and immediately thought I’d make these Strawberry Banana Baked Oatmeal Singles. I already had ripe bananas at home and I’m obsessed with baked oatmeal, so it’d be perfect, right? Well, I “accidentally” ate the whole pint of perfect strawberries before this recipe had a chance, but once I made these later in the week, I was really glad I went back for more ....more
