Easter Bird's Nest Cookies

Tomorrow Jeff and I are traveling to his parent's house to celebrate Easter with his side of the family. Since we will be in Florida next week (yippeee!) and his siblings are also traveling Easter weekend, we decided to all celebrate the weekend before. I was in charge of dessert since my brother-in-laws are amazing chefs and always take care of the meal for us! I thought my nieces and nephew would love these bird's nest cookies (and probably all of us adults too)!...more

Peanut Butter and Jelly Sushi

I must apologize for the lack of food posts/recipes this week. Since Jeff and I are living off of $1.00 a day, there isn't much food to make or blog about! There is, however, peanut butter and jelly. And lots of it. I actually attempted to make pb & j sushi before, but realized that I didn't do such a great job and wanted to try again with Jeff's help. This week was perfect for my second try!...more

Whole Wheat Apple Spice Bread

First and foremost, I would like to announce the grand opening of my Etsy Shop (called Bicycle Built for Two)! I have been working on headbands for about two weeks now and am so excited to finally be able to share them all with you. If you would like to purchase a headband, or even design a custom one, visit my shop and I will work with you to make the perfect headband for you or a little girl in your life!...more

Gluten-Free Banana Bread

Jeff and I made the trip to PA last night to visit my family for the weekend! I love love love coming home, but don't love the trip. It always takes us at least 4 hours (usually more) and with a 12 week old puppy, everything is more complicated!...more

Whole Wheat Chocolate Chip Oatmeal Cookies

I realized last night that I have been a horrible wife. I haven't made my husband any homemade cookies in quite some time. I've made dinners and health foods and nut butters...but no good ole' chocolate chip cookies....more

Mini Key Lime Pies

This week was my Dad's birthday and since we live in NY and they are in PA, we unfortunately couldn't celebrate with the rest of my family :( However, as I type this my mom and dad are on route to Long Island to visit for the weekend! So, Jeff and I got to work making my dad his favorite dessert for his birthday-key lime pie....more

I love the idea of making mini key lime pies. :)

Oatmeal Pancakes

Hi everyone, it's Cait again! Did you enjoy Jeff's post last night? And he thought he had writing skills of an 8th grader? I don't think so. His post was great-and so was that caramel frappe that he made! I told him not to make me once since it wasn't the healthiest recipe out there, but I actually ended up just drinking half of his....more

Hey Cait:
I just made your pancakes for supper. They were WONDERFUL. And sturdier than my old ...more

Caramel Frappe

Cait didn't really feel like blogging today, so I (Jeff) offered to take over for the day and write my very first blog post! Writing was never really my strong point in school and considering I have the writing skills of an 8th grader you will just have to bare with me. I chose to make a caramel frappe, something that I mastered making this past summer. It is usually only a summer drink for me, but I only know how to make about 4 things that is blog material and this one was the best!...more

Mini Blueberry Spelt Muffins

I've had the entire week off of work and feel like today is the first day I have actually been able to relax! Relaxing in my standards is baking, cleaning and going to the gym :) All 3 things make my day so much more enjoyable. So, after waking up at 5:45 am with Ollie and having a nice big bowl of oatmeal to hold over my hunger for a while, I hit the kitchen! I had some spelt flour left over from the scones I tried to make last week and wanted to give this flour another try....more

Garden Scramble

Good afternoon! I must say though, it feels like morning to us since we really haven't left the house or gotten dressed yet. This whole puppy business is quite the job. Jeff and I slept in the living room next to Ollie (click to meet him!) last night, each taking turns taking him outside to "go potty" (as we call it). I know soon enough he will learn that the floor is not his toilet...but until then, I think we will have many sleepless nights!...more
